Happy 2017 everyone.
First blog post of the year is a super easy beef wellington that don’t cost the earth, in the past we have been put off spending £80 on beef fillet that most online recipes recommend just for two of us, how ether this beef wellington will cost approximately £12 and feed two people.

Ingredients
2 6oz beef fillets
500g of ready rolled puff pastry
4 slices of Parma ham
8 closed cap mushrooms
butter 1 tbsp
clove of garlic
salt and pepper pinch
splash of white wine.
egg for egg wash.
sprig of thyme.
Method.
Firstly chop your mushrooms into fine slices pop them into a food processor and add in a splash of white wine, salt and pepper the clove of garlic and the tablespoon of butter, give it a quick blast just before it turns into a paste.
Fry the mushroom mixture in a frying pan until it drys out and browns off.
Next thing is to roll out your pastry to approximately 60cmx40cm and cut straight in half horizontally.

Next thing is divide your mushroom deluxe into quarters and spread a quater on both peices of Parma ham in a small circle.
Next thing quickly fry the beef 3 mins each side just to seal the meat then place on top of the mushroom then spread the remaining mushroom on top of the steak and fold over the ham.
then fold over the pastry and turn over, and press down the edges with a fork you can then gently score the top of the pastry in diagonal lines
Then whisk an egg, and egg wash both of the beef wellingtons and pop them into the oven for 15-20 mins on 200c until they go lovely and golden.
